I'm looking at a four-day vacation. A vacation from making supper. Of course I had to work to earn that vacation. Yesterday morning, I whipped up some Chinese food. Not like I have a secret recipe or anything. I used a frozen bag of fried rice, and a frozen bag of Teriyaki chicken.
But wait! I also added things to the frozen part. That's where most of the effort came in. I scrambled six eggs. Diced two large Vidalia onions and fried them. Opened a can of mushroom stems and pieces, plus a can of baby corns. And excavated a third of a bag of frozen broccoli from FRIG II's freezer. Yes, my skillet WAS overflowing. The Teriyaki chicken didn't even fit. Once it was cooked in the oven, I added it to the rest when I filled the (are you ready for this) Chinese take-out containers that I have saved from carryout.
That gave me five dinners. So Hick is good for three nights. I am fine for two. I can pick up someting for myself from the Country Mart deli when I do the shopping on Thursday. And Friday is GRILLED REUBEN SANDWICH day at the Senior Center. So I'm hoping Hick will bring us home a lunch for supper.
Whew! My shoulder hurts. Not so much from stirring all that Chinese food. But from patting myself on the back.
I'm impressed with those take-out containers, they look nice and are sturdy too with well fitting lids. I'm also impressed with all the effort you put in. It's what we lazy people are good at. Think ahead, plan ahead, do ahead, then sit back and take it easy for a week. My mum used to say do it right the first time and you can have time for yourself instead of having to do it over. I don't like to say she was lazy, but she did teach us early on to make our own beds, clean (polish) our own school shoes and clear the table so she didn't have to. I was quite self-sufficient by the time she packed up and left us when I was seven.
ReplyDeleteThey ARE nice and sturdy, which is why I couldn't see throwing them away. They are now a line of my Hillbilly Tupperware. This kind of container is for sale in 8-packs in 10Box, for about $10. They are not white, but you can choose red or blue. I'll take my free ones! I regret that I have sent many home with leftovers for The Pony, never to be seen again. I hope he didn't throw them away, but is using them.

That is smart, not lazy! Right now, I have 8 chicken thighs, many carrots and potatoes in the oven. A bag of cole slaw will be mixed. That will provide protein for the freezer and at least three days of meals for two people. And, the oven food is in a cooking bag. Not lazy, just helping Tommy by making dish washing easier for him.

That reminds me, I forgot slaw mix when I did the shopping today! It's nice to have a few days of meals ready, to spend time on more "fun" things than cooking and cleanup.
